Place a sheet of parchment paper on a baking sheet.
To rice cauliflower, simply chop your cauliflower head into florets, put into your food processor and pulse until it looks like rice. Transfer riced cauliflower into a microwave safe bowl, loosely cover and microwave for 10 minutes.
While the cauliflower is cooking, add eggs, 2 cups of mozzarella, Italian seasoning, garlic, salt and pepper to large bowl. Add cooked cauliflower and mix until well-blended.
Spread mixture onto parchment covered baking sheet and bake for 25 minutes or until golden.
Add remaining 2 cups of mozzarella and bake an additional 5 minutes. Turn on broiler and place breadsticks directly underneath flame until cheese is browned and bubbly.
